Quebraditas
Quebraditas is a family-run coffee farm in Oporapa, Huila, led by producer Edinson Argote. With deep roots in Colombian coffee, the farm focuses on producing distinctive microlots through careful cherry selection and controlled processing.
The 18-hectare farm uses native shade trees and focuses on environmental practices including organic management and soil conservation.
Peach Co-Fermentado
Ripe cherries are selectively hand-harvested, with a minimum of 80% ripe cherries selected before processing. Floating is then used to remove low-density cherries and impurities.
The coffee undergoes a controlled dual fermentation, including a 24-hour stage followed by a 72-hour submerged fermentation with yeast and fruit. After fermentation, the coffee is dried for approximately 76 hours at an average temperature of 40°C before stabilisation in GrainPro bags.
