Hambela
Hambela, located in the Guji zone of Ethiopia’s Oromia region, is the origin of this lot produced by 650 smallholder farmers.
The carefully selected coffee cherries are brought to Birhanu Coffee Processing Station, where they undergo a carefully managed fermentation and drying process to develop their distinctive fruit character.
Anaerobic Natural
The ripest red cherries are carefully selected, sorted and floated to remove underripe cherries and impurities.
The whole cherries are then fermented anaerobically in sealed barrels for 7 days before being dried on raised African beds for 20–25 days. This process helps develop the coffee’s expressive fruit character while maintaining sweetness and balance.
