La Molienda

Located in the volcanic highlands of La Unión, Nariño, La Molienda is led by Benjamin Gilberto Rivera and his team. Only the ripest cherries are selectively harvested, then hand-sorted and floated to remove defects before processing. This microlot showcases the distinctive terroir and craftsmanship of the region.

Variedad Colombia

Developed by Cenicafé in the 1980s, Variedad Colombia is a hybrid of Caturra and the Timor Hybrid, bred to combine excellent cup quality with strong resistance to leaf rust. Known for its vibrant fruit character and balanced sweetness, it is a cornerstone of Colombian specialty coffee.

Processing

After hand-sorting and floating to remove defects, the cherries undergo 45 hours of aerobic fermentation to enhance sweetness and complexity. They are then transferred to parabolic dryers, spread in thin layers and turned regularly for even drying. Over 18 days the cherries reach a stable moisture content of 9.5–11%, preserving clarity, sweetness and the distinctive character of the lot.
